Cookery Demonstrations 2019
The chefs at the NI Countrysports Fair are always keen to bring their flare and passion for food to the fore at the show. Using the very best of locally grown and produced ingredients, each chef at the show will be presenting cookery demonstrations to visitors and showing them how they too can get the best out of our very rich sources of Northern Ireland’s finest foods.
With a number of talented local chefs attending each day, demonstrations will take place in the Crafty Artisan Food Village demo marquee as well as game meat demonstrations taking place in the BASC village.
Our live Kitchen theatre provides the perfect opportunity for guests to not only watch our local chefs cook live on stage but to taste the dishes that will showcase the finest ingredients from the Food Heartland.

Each Chef has their own unique style & will bring the Theatre Kitchen Stage to life with interactive demonstrations that will show skills & techniques that will enlighten your culinary knowledge.

Mervyn ethos is simple… Good ingredients produce the best dishes. His continual search for local suppliers to showcase on his menu has earned him the reputation amongst the culinary community as being an ambassador for sourcing ingredients with the least amount of food miles as possible. A belief that has won him awards and a massive amount of loyal customers and regulars who frequent Groucho’s for his weekly specials combining his latest artisan find with his unique cooking style.

The Aussie chef famed for creating the Uluru brand in Armagh has left his legacy restaurant and has made an impact in the Belfast cooking scene of late, heading up food operations at the iconic Sweet Afton Bar & Kitchen. Dean has also recently been appointed as a brand ambassador chef for Moy Park Ireland. His style of cooking has always had hints of Pan Pacific flavours which has won him numerous awards such as the All Ireland International & Ethnic Chef of the Year.

Gary needs no introduction as one of most technically talented chefs in the area his style of cooking dishes with emphasis on healthy eating means that he gets the maximum amount of flavor out of every ingredient. Gary treats his locally sourced products with the upmost respect and tends to create dishes that are so visually appealing that it almost seems a shame to eat them. During his career he has trained many young chefs who have gone on to succeed within the industry due Gary imparting them with his knowledge and skills.

One of the shining lights of the young gun chefs emerging onto the culinary scene. Having recently won The All Ireland Young Chef of the Year accolade Max has proven that with dedication to his craft & sheer passion for food that you can succeed at the highest level of competitive cooking. He has a unique ability to combine flavours and textures which he utilizes to put modern twists on traditional dishes. His demonstration will definatly be entertaining as he engages with the audience evoking a feeling of a culinary journey.

Chef of the Year – Best Steak Competition

You do not need to be a qualified chef to enter; a flair and love of good food is all we ask. This competition is taking place over the Saturday and Sunday at the show.
To enter the competition, all you have to do is send your name, contact number, email address and day on which you are available to compete to: firstname.lastname@example.org.
Entrants will be selected at random from the list of competitors received. All entrants must be 16 years old or over.
A cash prize of £200 will be awarded to the competitor who comes up with the best Steak dish, as decided by the competition judges. This competition is kindly sponsored by M&W Meats and supported by DAERA NI Regional Food Programme.
To prepare and cook two same plated main course dishes, utilizing steak which is kindly being supplied by M&W Meats. All competitors must supply ingredients and equipment to enable them to complete the dishes. The competitors may be permitted to use prepared stocks and sauces. But no other preparation is allowed.
The dishes will be judged on taste, flavour, dish composition. Judges decisions are final.
Competitors must provide a typed menu for presentation to the judges.
The kitchen facilities are as follows:
1 x four burner ring hob
1 x gas oven
1 x microwave
All other equipment must be provided by the competitor.
